Mango Sticky Rice (Khao Neow Mamuang)

Mango can be found in abundance in Southeast Asia, especially in Thailand and Malaysia. Without doubts, mango is loved by many Southeast Asian, including you and me. Recently, there are plenty of mangoes sold for very low price in the market, since I am a mango lover, I have bought 4 kilograms of mango to enjoy!
With so many mangoes stored in my fridge, I started to think of making some desserts with mango, hmm,  how about the mouth-watering Thai dessert: Khao Neow Mamuang?
Khao Neow Mamuang or Mango Glutinous Rice Dessert is a well-known dessert in Thailand, it is extremely delicious yet super easy to make.  Beside mango, another important ingredient of this dessert is glutinous rice (sticky rice). Mango and Glutinous rice, such a great combination!
Let’s check out the ingredient needed.

Ingredients
2 cups glutinous rice, washed
½ cups water
1 cup sugar
2 cups coconut milk
3 pandan leaves
1 cup sugar /palm sugar (for topping)
1/2 teaspoon salt
4 ripe  mangoes, cut into thick slices/cubes
1 tbs toasted sesame seeds
1 tbs tapioca starch

Mango Sticky Rice (Khao Neow Mamuang)

Method
1) add in washed glutinous rice and ½ cup water in a steamer, cover and steam over  boiling water for 30 minutes until fully cooked.
2) mix together 1.5 cups coconut milk, 1 cup sugar, 1/2 teaspoon salt and pandan leaves, bring to a boil, take out the pandan leaves and set aside to cool.
3) Combine this mixture with cooked rice, folding the two together until thoroughly mixed. Cover and set aside to rest for 20 minutes, allowing rice to absorb all of the seasonings.
4) mix the remaining coconut milk with sugar or palm sugar, tapioca starch and a pinch of salt, bring to a boil (keep stirring)
5) Put the sticky rice and mangoes on a serving dish, pour the topping sauce over the sticky rice, sprinkle with the toasted sesame seeds. Serve.
