Hor Fun Recipe : The Famous Southeast Asian Char Kuey Teow
Hor Fun, or flat rice noodle is the delicious food that loved by Southeast Asian as well as people from other countries. It is equally good in soup base (kuey teow tang, chicken floss hor fun, etc) or in stir fry(char kuey teow, clam hor fun,etc). Char Kuey Teow, the dish I am going to share today is the one of the top famous hor fun dishes in Southeast Asia. Why is it so popular? Well, it is pretty hard to explain in words, therefore if you really want to know the answer, please try to make this single meal dish at home. It is never difficult to make this tangy dish, just follow the steps stated below, I promise, you will definitely love it!
Before we start, I would like to share an experience I had before with you. Well, I bought 2 pack of kuey teow, 1 consumed and the other one was kept in the fridge (notice: I didn’t freeze it). After 2 day, I used it to make char kuey teow and the result, the kept hor fun was not chewy, it became too soft! Because of that, the quality of that char kuey teow dropped… Therefore, the moral of the story is, try to use fresh hor fun in your cooking !
Ok, back to the hor fun recipe. Let’s see what ingredient we need to cook Char Kuey Teow:
1 pack hor fun (500g)
10 prawn, peeled & cleaned
2 squids, cleaned & cut into pieces
2 eggs
200g bean sprouts
100g chicken breast meat/pork, cut
1 tbsp chili paste
50g green mustard, washed & chopped
2 glove garlic, mashed
2 tbsp light soy sauce
1 tbsp dark soy sauce
salt to taste
Now, some simple steps to make this dish:
- a pan or wok, add in oil and garlic, fry till fragrant

- add in chicken meat, prawn, squids and 1/2 tbsp light soy sauce, stir fry till mix well
- add in small amount of bean sprouts, stir fry for 10 seconds, then add in the hor fun, green mustard, 1 tbsp dark soy sauce, 2 tbsp light soy sauce and chili paste, stir fry for 2 minutes (none stop).
- pour in the bean sprouts, quickly stir fry till mix well. Keep the fried noodle in one corner of the pan or wok, add 1 tsp oil to the other side of the pan, beat the eggs and fry till almost cooked, pour in the fried noodle and stir fry till mix well.(see pic)

- Remove heat, serve hot.
