Green Curry Chicken or Gaeng Kiew Wan Gai in Thai, is a famous Thai Cuisine originated from Central Thailand. Green Curry Chicken is loved by most people, especially those who can’t take hot stuff or don’t enjoy “mouth-burning” feeling but want to eat Thai food, because it is not as hot as other Thai dish, in fact it is pretty sweet.

Green Curry Chicken is very much different from other curries, beside not as hot and spicy like others, it also contains a lot more vegetable, like eggplant, green bell pepper, onion, carrot and cauliflower. You will definitely love it if you are a veggie lover! Well, maybe because so many vegetables are added in, therefore it turns to not so hot and spicy, but sweet in taste. (You see, carrot, green bell pepper, eggplant are quite sweet.)

Whether you believe or not, you can make a delicious Thai Green Curry Chicken in less than ½ hour! Yes, just ½ hour, even for those who never cook green curry before, hard to believe? Let’s prove it then!

Ingredient:

500g chicken, chopped ½ carrot, sliced
150ml thick coconut milk Handful of basil leaves
100g green curry paste 1 green bell pepper, cut into pieces
200g eggplant, cut into 2 inch long 5 green chilies
Handful of coriander leaves 2 tbsp fish sauce
Handful of mint leaves 2 tbsp sugar
1 stalk lemon grass, crushed 3 tbsp oil
2 clove garlic, crushed Salt to taste

To prepare:

  1. use a blender, add in coriander leaves, mint leaves, basil leaves, green chilies, fish sauce, sugar and 50ml water, blend till it form a green paste

  2. heat up oil in a pan, fry garlic and lemon grass till fragrant, add in chicken, green paste and green curry paste , stir fry till chicken is almost cooked.

  3. Add in carrot, green bell pepper and eggplant, simmer for 10 minutes or till eggplant is soft.

  4. remove lid, pour in coconut milk, stir well till thicken. Served hot with steamed rice

    Thanks, and for any readers that are having difficulty chopping onions without the crying, here’s an incredibly easy tip – put them in the fridge first, then chop them straight away after taking them out! No more tears! I found some more onion soup recipes here if anyone wants to try some more recipes.
