Do you like Durian? Well, I must agree that Durian is an “extreme” fruit, is either you superb love it or you superb dislike it, all thank to it “wonderful” smell! Maybe because of the culture in Southeast Asia, or perhaps the influence from the elderly people, most Southeast Asian love Durian, they even called it “King of the Fruits”! Why it got such a great nick name? I guess for those people who love Durian, they will properly say it’s all because of its wonderful taste and irresistible smell; while for those dislike it, maybe they will say it’s because of its “tough” outlook, full of thorn, like a King’s crown….

Since Durian is abundance in this region, many dessert have been created using Durian paste, for example, Durian Ice-cream, Durian cake, Durian Dodo, and even Durian Mooncake (pretty famous now a days). Actually, Durian meat is very creamy and sticky, which is very suitable for making dessert, don’t you think so?

Like most of the Southeast Asian, I am a big fans of Durian too. Especially when Durian is chilled and eaten under the hot sun, it gives a indescribable satisfaction! And now, I want to share with you the recipe of this great dessert: Durian Cream Puff. If you like Durian, you should try to make this at home. You won’t regret!

Ingredient for Puff pastry:

250g wheat flour 250ml water
200g butter 10 eggs

Ingredient for Durian Custard:

1L evaporated creamer 100g custard powder
100g green bean powder 150g sugar, or to taste
500g durian flesh ¼ tbsp salt

To prepare:

  1. Boil water with butter. Add in flour and continuously stir under low heat till the dough leave side of pot, set aside.

  2. Beat eggs till creamy, gradually add eggs to dough, mix well.

  3. Fill mixture into a piping bag, pipe onto a greased cookie pan, make 15 puff

  4. Bake puff at preheated oven of 200C for 20 minutes, then lower temperature to 170C and bake for another 10 minutes

  5. To make Durian Custard, mix creamer, sugar, green bean powder, custard powder and salt in a pot, cook using low heat till thicken. Add in Durian and cook for another 5 minutes, let it cool

  6. cut the puff into 2, fill with Durian custard and chilled. Served.
