Claypot Chicken Rice Recipe

I like to use claypot in my cooking, well, not just me actually, most of the Southeast Asian love to use claypot in their cooking, therefore many “Claypot dishes” can be found in this region. Beside Claypot Lao Shu Fen, another famous single meal dish that served in claypot is Claypot Chicken Rice, a substantial and delicious meal that loved by Southeast Asian. Well, not like Claypot Lao Shu Fen, where we need to use pan to fry the garlic, meats and other ingredients, Claypot Chicken Rice is prepared in claypot, yes, no pan or wok is used, and no stir fry is needed, just claypot alone. Cannot imagine how? I will share with you step by step on how to make this yummy dish.

First, let’s prepare the ingredient:

300g chicken, chopped into small pieces 2 tbsp light soy sauce
250g uncooked rice, soak for ½ hour Dash of pepper
250ml water ½ tbsp sugar
4 clove garlic, chopped 1 tbsp sesame oil
½ inch ginger, chopped ½ tbsp cornflour
2 tbsp oyster sauce 1 pandan leaf
1 tbsp dark soy sauce 100g Broccoli, cut into small pieces
Spring onion, for garnish

Cooking steps:

  1. put in chicken in a bowl, add in oyster sauce, light soy sauce, dark soy sauce, sesame oil, sugar, pepper, garlic, ginger and cornflour, mix well and let it marinate for at least ½ hour

2.   add soaked rice, pandan leaf and 250 ml water in a claypot. Cook using high heat till boiled, remove lid, turn to low heat, remove the pandan leaf

3.   put the marinated chicken on top of the rice, covered and let it cook for 10 minutes, remove heat, covered with lid.

4.   meanwhile, cook water in a pot, when boiled, add in broccoli till cooked, take out and set aside

5.   add the boiled broccoli on top of the chicken rice,  garnish with spring onion, served hot.

Cooking tips:

  1. You may add in salted fish to enhance the chicken rice taste

  2. You may replace broccoli with other vegetable, like green mustard, bean sprouts, etc

  3. When using claypot to bake rice, the rice is pretty easy to get overcooked or burnt, therefore take extra care for the heat. However, slightly burnt is acceptable, actually it gives the whole dish a better aromatic sensation.

  4. Soaked the rice beforehand can shorten the baking time.

  5. A simple step like add in pandan leaf in baking the rice can make the whole dish even more yummier.
